Our signature items include the Apple Pancake, a single large pancake smothered with sautéed apples and cinnamon sugar baked to perfection, to create a deliciously rich cinnamon sugar glaze. We opened our namesake restaurant “Merritt Island Pancake House” in 2017 while having full time jobs during the week and operating the Pancake House on weekends only.
